Summer Squash Sautee

Ingredients

  • 1 large red onion, sliced
  • 2 tbsp cooking oil
  • 2 cups halved small sunburst or pattypan squash
  • 2 small yellow squash, cut into 1/2 in slices
  • 1 med. Sweet red pepper, julienned
  • 1 med green pepper, julienned
  • 2 tsp minced fresh basil or 1/2 tsp dried basil
  • 2 tbsp red wine vinegar
  • 4 bacon strips, cooked and crumbled
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large skillet, saute onion in oil until tender.
  2. Stir in the squash, peppers and basil.
  3. Cover and cook until vegetables are crisp-tender.
  4. Remove from the heat; pour in the vinegar and bacon.
  5. Sprinkle with parmesan cheese.

Yield: Makes 8-10 servings
