Baby Purple 


The two-inch-wide fiesole artichoke has a nutty flavor and a deep wine color that does not fade with cooking. Bred from the violetta de provence, a purple variety native to southern France, these artichokes are so pretty that some use them ornamentally. Trim, steam, filet, baste with olive oil, grill, add a dash of sea salt!
